Espiritu de Chile wines are crafted for the adventurer. For those seeking to find some of the best wines the Leyda Valley of Chile has to offer. Located just west of the capital city, Santiago, the Leyda Valley is home to some of Chile’s most prestigious wineries and is often described as “Kissed by the Ocean” for its proximity to the Pacific Ocean. This proximity allows the region to benefit from the weather patterns created by the Humboldt Current and the production of fresh and vibrant wines.
This Sauvignon Blanc is harvested by hand in March, following a long and cool season in the Leyda Valley, a mere 12 km from the Pacific Ocean. The influence of the sea allows grapes to ripen slowly, thanks to the natural low-temperature breeze that blows from the west. The grapes are then taken to the winery where the bunches are gently pressed. Alcoholic fermentation is done with selected yeasts at low temperatures to preserve the fresh and delicate aromas. No wood is used, so this deliciously crisp wine will never skew oaky.
The nose features intense aromas of tomato leaf and guava that blend and complement a hint of freshly mown grass. The palate boasts zesty freshness, firm acidity and length that make for a perfectly balanced wine. We recommend serving at a cool 55 degrees Fahrenheit and pairing with appetizers, fish and seafood, or fresh and semi-ripened cheeses like Brie.
